Recipe: Near Eastern Chewy Soup
- 4 cups lowfat plain yogurt
- 2 cups chicken stock or broth
- 1/2 cup water
- 1 tbsp parsley, minced
- 1 tsp dill weed
- 1 tsp fresh or dried mint, crushed or chopped
- Salt to taste
- Dash of cayenne
- 1/2 cup golden raisins
- 1/2 cup thinly sliced green onions (include some tops)
- 1/2 cup chopped (broken) cashews
- 1 cucumber, peeled and chopped
- Smoothly blend the yogurt, broth, and water. Then add the parsley, dill weed, mint, salt, and cayenne; chill, covered, overnight.
- Serve in a toureen with side dishes of raisins, onion, cashews and cucumber to pass to add according to each one’s taste.
