Recipe: Oatmeal Cookies II
- 1/2 cup butter
- 1 1/4 cup brown sugar
- 1 egg
- 1 1/4 cup rolled oats
- 1 3/4 cup pastry flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1/4 tsp mace
- Measure shortening and butter, then add to a mixing bowl. Cream together.
- Add egg and beat until creamy.
- Add rolled oats; blend well.
- Add flour, salt, ginger, cinnamon, and mace; Blend well.
- Cover bowl, place in refrigerator, and chill for one hour.
- Preheat oven to 350°F.
- Take dough our of refrigerator, and roll between palms to form balls about 3/4 inch in diameter.
- Place on a greased cookie sheet and flatten by pressing down on ball with a fork.
- Bake about 10 minutes.
