Recipe: Orange, Prune and Apple Stuffing
- 8 cup fresh bread cubes
- 3 stalks celery, finely chopped
- 10 shallots, finely chopped
- 1/2 cup butter
- 10 prunes, pitted and sliced
- 4 apples, peeled and sliced
- 1 cup fresh orange juice
- 2 tbsp coarsely shredded orange rind
- 1 cup chopped parsley
- 1/2 tsp thyme
- 1/2 tsp ground sage
- 2 tsp sea salt
- freshly ground black pepper, to taste
- Spread bread cubes out to dry for an hour or so before cooking.
- Saute celery and shallots in butter until soft and golden. Acid the prunes and apples and cook a few minutes.
- Combine this mixture with the bread cubes.
- Add remaining ingredients and toss them together lightly but thoroughly.
