Recipe: Oriental Chicken with Mushrooms
6 boneless skinless chicken breasts
1/2 tsp salt
1/2 tsp pepper
2 tbsps canola oil
1/4 lb fresh mushrooms, clean and sliced
1 can (10 3/4ozs) chicken gravy
1 tsp soy sauce
1/2 tsp powdered ginger
1/4 cup thinly sliced water chestnuts
1 pkg (9 ozs) frozen French style green beens, thawed
1. Cut each chicken breast into 5 long strips.
2. Sprinkle each with salt and pepper.
3. Heat canola oil in large heavy skillet, over medium heat.
4. Add chicken strips and mushrooms to skillet and cook until browned.
5. Mix gravy, soy sauce and ginger; pour over chicken.
6. Add water chestnuts and beans over the top of the chicken.
7. Cover; reduce heat to low and cook gently about 10 - 20 mins or until chicken is tender and beans are tender-crisp, stirring occasionally.
