Recipe: Oriental Turkey Meatballs
Turkey Meatballs:
- 1 pound ground turkey
- 1/2 pound ground beef
- 3/4 cup quick oatmeal
- 5 oz can water chestnuts, drained and chopped
- 1 egg, slightly beaten
- 1 tbsp low sodium soy sauce
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp sea salt
- 1/2 cup low fat milk
Sauce
- 20oz can pineapple chucks (reserve can juice)
- 1 cup granulated brown sugar
- 2 tbsp corn starch
- 1 can condensed beef boullion
- 1/2 cup red wine vinegar
- 2 tsp low sodium soy sauce
- 2/3 cup chopped red pepper
- Prepare the meatballs by combining all of the ingredients listed above under meatballs.
- Mix well, then let sit for 5 minutes. Mix again then form into 1 inch balls.
- Cook turkey meatballs in a large lightly greased non-stick skillet until brown. Remove any accumulated fat, and set cooked meatballs aside while preparing the sauce.
- Prepare the sauce by mixing sugar and cornstarch in a 2 quart pan and then gradually stirring in the reserved pineapple juice, beef boullion, red wine vinegar, and low sodium soy sauce.
- Cook the sauce while stirring constantly over medium heat until thickened and clear.
- Add the pepper chunks and pineapple to the pan.
- Pour the sauce over the meatballs and simmer for about 20 minutes.
