Recipe: Oysters Casino
- bacon, 12 strips
- green pepper
- 1/3 cup plus 2 tbsp butter
- 3 tbsp chopped parsley
- 3 tbsp chopped chives
- 36 oysters
- Cook 12 strips of bacon until translucent but still soft. Cut bacon strips into thirds. Discard fat.
- In same skillet cook green pepper in 2 tbsp butter, combine with chives and parsley and add 1/3 cup of butter.
- Put opened oysters on a bed of rock salt.
- Place a little green butter on each, a few drops of lemon juice and a piece of bacon.
- Bake at 450° F for 8 - 10 minutes.
