Recipe: Pearl Barley Ala Arab
- 1 cup pearl barley
- 1/2 cup pine nuts
- 1/2 cup unsalted butter
- 1 cup onion, finely chopped
- 1/2 cup parsley, finely chopped
- 1/2 cup chives, finely chopped (or sm. green onions)
- 6 cups low sodium beef broth
- 1 tsp sea salt
- Ground black pepper
- Saute pine nuts in butter for 5 minutes until golden brown.
- Remove pine nuts and then saute onions for 5 minutes.
- Add barley and brown lightly, stirring constantly.
- Add parsley, chives, low sodium beef broth, sea salt, and ground black pepper.
- Add half of the pine nuts. Pour into a casserole and bake at 350 F. for 1 hour, stirring well every 30 minutes.
- Sprinkle the rest of the pine nuts on top after last stir and bake for 20 minutes more.
