Recipe: Peasant Bread
- 2 1/2 cups flour
- 1 cup rye flour
- 1/2 cup cornmeal
- 1 tsp salt
- 1 tsp dill seed
- 1/2 cup bulgar
- 1 1/2 tsps sugar
- 3 1/4 tsps active dry yeast
- 1/2 plus 3/4 cup warm water
- Preheat oven to 350 degrees.
- Mix all except yeast and water in processor work bowl.
- Soften yeast in 1/2 cup warm water.
- Pour yeast and about 3/4 cup water water through feed tube with motor running.
- Blend until dough forms a mass.
- Shape into smooth ball or baguettes.
- Place on greased and cornmeal-dusted baking pan.
- Grease top of dough, cover and let rise.
- Bake about 40-50 minutes.
