Recipe: Pineapple Cheesecake
- Two 8 ounce packages cream cheese
- 2 eggs
- 1/2 cup plus 2 tbsp sugar
- 1/2 cup crush pineapple, drained
- 2 tbsp flour
- 1 cup sour cream
- 2 tsp vanilla
Crust:
- 1 package graham crackers, crushed
- 3 tbsp sugar
- 6 tbsp butter, melted
- Mix cracker crumbs, sugar, and butter together.
- Press into a 9" pie pan.
- Mix together beaten eggs, 1/2 cup sugar, pineapple, flour, and 1 teaspoon vanilla.
- Blend cream cheese and egg mixture together. Pour into crust.
- Bake at 375° F. for 20 minutes.
- Remove and let stand.
- Combine sour cream, 2 tablespoons sugar, and 1 teaspoon vanilla.
- Spread over baked filling. Bake at 425° F for 10 minutes.
- Cool and chill overnight.
