Recipe: Pita Bread
- 3 cups warm water
- 2 tbsp yeast
- 2 tsp salt
- 1 tsp sugar
- 3 tbsp olive oil
- 6 or 7 cups white flour
- Dissolve yeast in 1 cup warm water and let sit 10 minutes.
- Add 2 cups warm water, sugar, salt, and olive oil.
- Beat in 3 cups flour. Mix in rest of flour and knead until smooth and elastic.
- Let rise in warm place (85°) until doubled.
- Punch down and let rest for 10 minutes
- Roll into 16" long roll.
- Slice off 1" slices and ball them. Then roll each ball to about 6" round.
- Lay the rounds of Pita dough on towels; cover with towels for 1 hour.
- Bake at the Pita Bread at 500° F on lowest rack in oven for 5 minutes.
- With any luck they form pita pockets.
