Recipe: Polynesian Chicken Curry
- 3 or 4 large boneless chicken breasts
- 1/4 cup canola oil
- 1 1/2 tsps curry powder
- 12 oz unsweetened pineapple juice
- 1/4 cup honey
- 1/4 cup ketchup
- 1 1/2 tsp salt
- 1/4 tsp garlic powder
- 1 1/2 tbsp cornstarch
- 1 cup halved cherry tomatoes
- 1 green or red pepper, cut in 1/2 inch chunks
- In a large skillet, brown chicken lightly in oil; remove chicken from skillet.
- Drain all but 1 tbsp oil from skillet.
- Stir in curry powder, allow to brown.
- Add 1 1/4 cups pineapple juice, honey, ketchup, salt and garlic powder.
- Stir and add chicken; cover and simmer 1/2 hour.
- Remove chicken from skillet.
- Mix cornstarch with remaining pineapple juice.
- Add to sauce in skillet and cook until thickened.
- Add tomatoes, peppers and chicken; cook 10 mins covered.
