Recipe: Polynesian Ham and Gingered Rice
- 1 1/2 to 2 lb ham steak
- 1 8oz can pineapple slices
- 1/3 cup brown sugar
- 3 tbsps ketchup
- 1 tbsp prepared mustard
- Preheat oven to 375 degrees
- Place ham in shallow casserole.
- Drain juice from pineapple and reserve for use in the rice.
- Arrange pineapple slices over top of ham.
- Combine brown sugar, ketchup and mustard.
- Spoon over ham and pineapple slices.
- Cover and bake 30 mins.
- Remove cover and bake 30 mins more.
- Baste occasionally.
- Serve with gingered rice.
Gingered Rice
- 1 pkg oriental rice mix
- 2 cups pineapple juice and water
- 1/4 cup slivered green pepper
- 1/4 tsp ground ginger
- Prepare rice according to pkg, adding enough hot water to the reserved pineapple juice to measure 2 cups.
- Stir juice mixture, green pepper and ginger into rice.
- Cook rice as directed on package.
