Recipe: Poppy Seed Fruit Salad
Poppy Seed Dressing:
- 1/4 cup sugar
- 2 tbsp honey
- 1 tsp poppy seeds
- 1/2 tsp grated onion
- 1/4 tsp dry mustard
- 3 tbsp cider vinegar
- 1 1/2 tbsp lemon juice
- 1/2 cup canola oil
Fruit Salad:
- 10 oz can chilled mandarin orange sections, drained
- 2 medium kiwi fruit, peeled and sliced
- 3/4 cup toasted walnuts
- 6 cups mixed salad greens
Poppy Seed Dressings:
- In a 2 cup pyrex measuring cup stir together the honey, sugar, poppy seeds, onion, mustard, vinegar, and lemon juice.
- Add canola oil, and mix well.
Fruit Salad
- Reserve 6 each of the orange sections, kiwi and walnut halves for use a garnish.
- Place the salad greens in a salad bowl. Add the fruit and nuts and mix together.
- Drizzle the Poppy Seed Dressing over the top of the fruit and salad greens; Toss gently.
- Arrange the Fruit Salad on individual salad plates.
- Garnish each plate with a mandarin orange slice, kiwi and a walnut half.
Makes 6 servings. |
