Recipe: Potato Salad For A Crowd-The Very Best
- 10 pounds potatoes, peeled
- 1 medium onion, diced
- 1 cup sugar
- 1 cup canola oil
- 1 cup vinegar
- 4 tsp sea salt
- 1 dozen hard cooked eggs, peeled and diced
- 1 quart of salad dressing
- 2 tbsp prepared. mustard
- Cook the potatoes with the chopped onion.
- In a 2 quart pot, combine the sugar, canola oil, vinegar, and sea salt.
- Heat to dissolve the sugar and pour over potatoes and onion.
- Cover and refrigerate at least overnight.
- When ready to serve add the hard boiled eggs, salad dressing and mustard and mix well.
