Recipe: Potatoes A La Fife
- 6 medium potatoes
- 2 tbsps salad oil
- 1/4 cup butter or margarine
- 1 cup chopped onion
- 2 cloves garlic
- 1/2 cup sour cream
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp parsley flakes
- Preheat oven to 400 degrees.
- Wash potatoes, dry well and prick with fork.
- Rub skins with salad oil.
- Bake for 1 hour.
- In a skillet melt butter; saute onion and garlic until tender and set aside.
- When potatoes are done, slice off the top third lengthwise.
- Scoop out the 6 shells, put insides in bowl and mash until smooth.
- Add onions and garlic (will butter).
- Mix in rest of ingredients and beat well.
- Spool filling back into potato skins and swirl tops.
- Return to oven for 10 minutes.
