Recipe: Twice Baked Potatoes
- 6 large potatoes
- 3/4 cup milk
- 8oz carton sour cream
- 1 stick butter or margarine, softened
- 3 tbsps dried chopped onions
- salt, pepper and garlic salt to taste
- dried chopped parsley
- grated sharp Cheddar cheese for garnish
Preheat oven to 350°F. Bake potatoes until done in conventional or microwave oven. Allow to cool about 10 minutes. Cut potatoes in half lengthwise. Scoop out as much potato as you can without going through potato skin. Mash potato pulp with a fork or potato masher. Add all ingredients except cheese. Beat with an electric mixer until smooth. Fill potato shells with mixture. Top with grated cheese. Place in oven at 350° and heat thoroughly. Serve hot.
