Recipe: Seafood Enchiladas
- 1 tbsp butter or margarine
- 1/3 cup chopped onion
- 16 oz imitation crab meat
- 8-10 oz shrimp
- 4 oz can green chilies
- 1 cup salsa
- 1/2 tsp chili powder
- 1/4 cup butter or margarine
- 2 tbsps flour
- 1 can mushroom soup
- 1 cup milk
- 1 tbsps dried cilantro
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup sour cream
- 1 1/2 cups shredded cheese
- 10 (8 inch) flour totillas
- Preheat oven to 350° F.
- Cook onion in 1 tbsp butter.
- Add crab meat, shrimp, green chilies, salsa, and chili powder; mix well.
- In another pan, melt 1/4 cup butter.
- Add flour and soup.
- Blend, then add milk, cilantro, chili powder, salt and pepper.
- Cook over medium-high heat unti mixture thickens and bubbles.
- Stir in sour cream and 1/2 cup cheese.
- Spoon 1/4 cup cheese sauce into bottom of 9x13 inch pan, sprayed with Pam.
- Fill tortillas with seafood filling, roll up and place in pan.
- Pour cheese sauce over tortillas then top with remaining 1 cup cheese.
- Bake at 350° F for 35 mins.
