Recipe: Puffs
- 2 cups scalded milk
- 2 cups water
- 9 to 11 cups flour
- 3/4 stick of butter
- 1 tbsp sugar
- 1 tbsp salt
- 4 1/2 tsps yeast
- Scald milk; add yeast to milk and water (milk must be at room temperature).
- Melt margarine and combine with milk and water, salt, sugar and yeast.
- Add flour to mixture.
- Knead until smooth.
- Refrigerate overnight.
- Roll or mash dough very thin.
- Cut with knife into rectangle or triangles.
- Shape approximately 2X4 inches.
- With knife, slit two places in sides about an inch long.
- Drop into hot fat until light brown.
- Roll in powdered sugar.
