Recipe: Pumpkin Bread
- 3 cups granulated sugar
- 1 cup canola oil
- 3 cups flour
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- 2 cups (1 small can) pumpkin
- 2 tsp baking soda
- 1 1/2 cups chopped walnuts
- Preheat oven to 350° F.
- Mix the sugar, canola oil, flour, salt, cinnamon, nutmeg, ginger and pumpkin together in a large bowl.
- Sift the flour and baking soda together. Add slowly to the pumpkin mixture.
- Add walnuts; gently mix well.
- Bake in 3 well-greased bread tins for 1 hour at 350° F.
- Cool Pumpkin Bread on wire racks and serve with cream cheese.
