Recipe: Pumpkin Bars



 

Recipes using McCormick Ground Cinnamon

 

Pumpkin Bar Ingredients

  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup canola oil
  • 16 ounce can pumpkin (or mincemeat)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 1 tsp baking soda

Icing

  • 3 ounce package cream cheese, softened
  • 1/2 cup butter, softened
  • 1 tsp vanilla extract
  • 2 cups sifted powdered sugar
  • chopped walnuts for garnish

  1. In mixer bowl, beat together eggs, granulated sugar, oil, and pumpkin until light and fluffy.
  2. Stir together flour, baking powder, cinnamon, salt, and soda.
  3. Add to pumpkin mixture and mix thoroughly.
  4. Spread batter in ungreased 15" x 10" x 1" baking pan.
  5. Bake in 350° F oven for 25 to 30 minutes.
  6. Remove from oven and cool.
  7. Frost with cream cheese icing.
  8. Sprinkle with chopped walnuts.
  9. Cut into bars.

Makes about 2 dozen Pumpkin Bars.

Cream Cheese Icing:

  1. Cream together creamcheese and butter.
  2. Stir in vanilla extract.
  3. Add powdered sugar, a little at a time, beating well, until mixture is smooth and creamy.
