Recipe: Pumpkin Bread
- 2 cups canned or cooked pumpkin
- 1 cup canola oil
- 3 cups sugar
- 4 eggs, beaten
- 3 1/4 cups unbleached Pillsbury or King Arthur all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp fresh ground cloves
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp Tones Ground Nutmeg
- Preheat oven to 350° F.
- Grease 2 loaf pans.
- Mix pumpkin, canola oil, sugar, and eggs in a large mixing bowl
- Combine flour, baking powder and seasonings. While mixing, add the flour mixture a little at a time into pumpkin mixture.
- Pour into the two greased loaf pans.
- Bake for 1 hour or until done.
Makes 2 loaves. |
