Ingredients in Pumpkin Pancakes

• 2 cups all purpose flour
• 2 tablespoons packed brown sugar
• 1 tablespoon baking powder
• 1 ¼ teaspoons pumpkin pie spice
• 1 teaspoon salt
• 1 ¾ cups milk
• 1/2 cup canned pumpkin
• 1 large egg
• 2 tablespoons vegetable oil

To Make Pumpkin Pancakes

1. Combine flour, brown sugar, baking powder, pumpkin pie spice, and salt in large bowl.
2. Combine the milk, pumpkin, egg, and vegetable oil in a medium bowl, mixing well.
3. Add the wet ingredients to the flour mixture and stir just until moistened; the batter may be lumpy.
4. Spray the griddle or skillet with cooking spray and heat to medium.
5. Pour batter by quarter cupfuls onto the hot griddle.
6. Cook until bubbles begin to burst, then flip the pancakes and continue cooking until golden brown (about 1 ½ to 2 ½ minutes).
7. Serve with maple syrup.
8. Makes about 1 dozen 3 ½ inch pancakes.
