Recipe: Quick Rice Casserole
- 2 tbsps butter
- 1 tbsp drided sliced onion
- 2 tbsps chopped green or red pepper
- 2 cans beef broth
- 2 cups packaged precooked rice
- 1/4 cup toasted slivered almonds
- Preheat oven to 450 degrees.
- In a saucepan combine butter, onion, green or red pepper and beef broth.
- Heat to boiling.
- Place rice (as it comes from its pkg) in a shallow pan and pour hot liquid over it.
- Cover with foil.
- Bake at 450 degrees for 10-12 minutes.
- Remove from oven; add almonds and toss lightly with a fork.
Servings: 4 or 5 |
