Recipe: Carrot Bread

Carror Bread III Ingredients

• 1 cup sugar
• 1 cup shredded carrots
• 1/2 cup canola oil
• 1/4 tsp salt
• 1 tsp baking powder
• 1 tsp baking soda
• 2 eggs beaten
• 2 cups unsifted unbleached* Pillsbury or King Arthur All Purpose flour
• 1 tsp ground cinnamon
• 1/2 cup chopped walnuts

To make Carrot Bread

1. Preheat oven to 350° F.
2. Mix sugar, carrots, and canola oil together.
3. Add baking powder, baking soda, and eggs to mixture. Mix well.
4. With mixer on stir, add flour a little at a time, then add cinnamon, and nuts. Mix well.
5. Bake in greased loaf pan about 50-60 minutes** until done.
6. Remove from oven and cool on a wire rack.

* Unbleached flour in naturally whitened by aging and has the best taste. Bleached flour is chemically treated and may impart an off-taste to foods.

** Oven temperatures vary, so actual cooking time may be different.
