Recipe: Walnut Cake
- 6 eggs, separated
- 1 cup flour
- 1 cup sugar
- 2 tbsp baking powder
- 1/2 tsp salt
- 1 lb chopped walnuts
Syrup
- 3 cups sugar
- 2 1/2 cups water
- slice lemon
- stick of cinnamon
- 3 whole cloves (optional)
- 3 tbsp honey
Prepare syrup first, in order to cool.
- Combine sugar, water, lemon, cinnamon, and cloves.
- Boil for 18 minutes.
- Add honey and set aside.
- Remove lemon and cinnamon sticks.
Prepare cake
- Sift flour, baking powder, salt, and cinnamon.
- Beat egg whites until stiff and add sugar gradually.
- Add well-beaten egg yolks. Slowly fold in dry ingredients and nuts.
- Mix well and bake in a 9” x 13" pan ” pan at 350° F. for 35 minutes.
- Remove from oven and while still hot, pour the cooled syrup over cake.
- Let stand for a while (syrup will be entirely absorbed).
- Cut into diamonds, i.e. long parallel slices crossed with diagonal parallel cuts.
