Recipe: Zucchini Bread #3
- 1 cup grated unpeeled zucchini
- 1 cup sugar
- 1 egg
- 1/2 cup canola oil
- 1-1/2 cups flour
- 1 tsp ground cinnamon
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1/2 tsp ground nutmeg
- 1/4 tsp baking powder
- 1/4 tsp grated lemon peel
- 1/2 cup chopped walnuts
- Beat zucchini, sugar, and eggs together.
- Add oil, mix well . Stir together dry ingredients and lemon peel. Mix into zucchini mixture. Fold, in walnuts.
- Pour into greased 8-1/2 x 4-1/2 x 2-1/2 inch loaf pan.
- Bake 325° F for 60-65 minutes.
- Cool in pan for 10 minutes.
