Recipe: Red Beet Salad

Recipes using Durkee Ground Cloves

Ingredients in Red Beet Salad

• 10 pounds red beets
• 2 ½ cups vinegar
• 2 ½ cups water
• 5 teaspoons sugar
• 1 cup, 2 teaspoons caraway seeds
• 10 small onions, chopped
• 3 tablespoons, 1 teaspoon ground cloves
• bay leaves
• salt and pepper
• 15-20 ounces olive oil

To Make Red Beet Salad

1. Scrub beets and cook in salted water until tender.
2. Dip in cooked beets in cold water, peel and slice thinly.
3. In a large bowl mix thoroughly vinegar, water, sugar, caraway seeds, onions, ground cloves, bay leaves, salt and pepper.
4. Prepare marinade, smoothing mixture out with oil to taste.
5. Pour marinade over beets and let soak for several hours.
