Recipe: Red Raspberry Cake
- 2 pkgs frozen red raspberries
- 1 (3oz) pkg raspberry Jello (dry)
- 2 ¼ cups flour
- 1 ½ cups sugar
- 3 tsps baking powder
- 1/2 tsp salt
- 1/2 cup shortening
- 1 cup milk
- 3 eggs
- 1 cup miniature marshmallows
- whipped or ice cream
- Preheat oven to 350 degrees.
- Grease a 9 x 13 inch baking pan.
- Combine thawed raspberries with Jello and set aside.
- Sift flour, sugar, baking powder and salt into bowl.
- Add shortening and milk and eggs to dry ingredients.
- Beat at low speed to blend and continue beating until smooth.
- Put marshmallows in the bottom of a well greased 9 x 13 inch baking pan.
- Pour batter over marshmallows.
- Spoon raspberry mixture over the top of the batter.
- Bake at 350 degrees for 50 minutes or until done.
- Serve with whipped or ice cream.
