Recipe: Reuben Loaf
- 2 1/4 cups flour
- 1 pkg quick rise yeast
- 1 tbsp sugar
- 1 tbsp butter
- 1 tsp salt
- 1 cup very warm water
- pepper to taste
- 1/4 cup Thousand Island dressing
- 2 (6oz) pkgs sliced corned beef
- 4oz sliced Swiss cheese
- 8oz can sauerkraut, drained
Mix the first 7 ingredients together to make a ball. Knead on floured board for 4 minutes. Divide dough and divide the filling ingredients. Roll each part to about 6x1 2. Spread Thousand Island Dressing down the center. A layer of corned beef (folded). A layer of Swiss cheese cut in 4 strips. A layer of sauerkraut. Fold ends up over top and then the sides. Let rise for 15 minutes in warm place. Brush with beaten egg white and bake 400° for 25 minutes. In an hour's time you can have this ready.
