Recipe: Rice Con Queso
- 1 1/2 cups raw brown rice, cooked with salt and pepper.
- 1/2 cup dry black beans (or black eyed peas, pinto beans, etc), cooked
- 3/4 tsp granulated garlic
- 1 large onion, chopped
- 1 small can chilies or 1 large pepper, chopped
- 1/2 lb ricotta cheese, thinned slightly with milk or yogurt until spreadable
- 3/4 lb shredded jack cheese
- 1/2 cup shredded Cheddar cheese
- Preheat oven to 350 degrees.
- Mix together rice, beans, garlic, onion and chilies.
- In casserole repeat layers of rice/beans mixture, ricotta cheese and jack cheese.
- End with a layer of the rice/beans mixture.
- Bake for 25 minutes
- Sprinkle grated Cheddar over top and bake about 5 minutes more.
