1 1/2 cups raw brown rice, cooked with salt and pepper.
1/2 cup dry black beans (or black eyed peas, pinto beans, etc), cooked
3/4 tsp granulated garlic
1 large onion, chopped
1 small can chilies or 1 large pepper, chopped
1/2 lb ricotta cheese, thinned slightly with milk or yogurt until spreadable
3/4 lb shredded jack cheese
1/2 cup shredded Cheddar cheese

Preheat oven to 350 degrees.
Mix together rice, beans, garlic, onion and chilies.
In casserole repeat layers of rice/beans mixture, ricotta cheese and jack cheese.
End with a layer of the rice/beans mixture.
Bake for 25 minutes
Sprinkle grated Cheddar over top and bake about 5 minutes more.
