Recipe: Rice Raisin Pudding
- 1 1/3 cup milk
- 2 eggs, beaten
- 1/4 cup sugar
- 1/2 tsp pure vanilla extract
- 1/2 cup cooked rice
- 1/3 cup raisins
- nutmeg
- cinnamon
- Preheat oven to 350 degrees.
- Heat milk until film forms on top; do not boil.
- In bowl, beat together eggs, sugar and vanilla.
- Gradually stir in milk.
- Blend in rice and raisins.
- Pour into a 1 qt baking dish greased with vegetable shortening or oil.
- Sprinkle nutmeg and cinnamon over top.
- Set baking dish inside a pan with 1 inch of water.
- Bake 35 minutes.
- Mix gently with fork, then bake 25-30 minutes longer or until knife inserted in center comes out clean.
