Recipes using Young Pecan Halves

Salmon Party Log

• 1 pound can red salmon
• 8 ounce package cream cheese, softened
• 1 tbsp lemon juice
• 1 tsp prepared horseradish
• 1/4 tsp sea salt
• 1/4 tsp liquid smoke
• 1/2 cup chopped pecans
• 3 tbsp snipped parsley
• 2 tsp fresh grated onion

1. Drain and flake the salmon, removing any skin and bones.
2. Combine the cream cheese with the lemon juice, horseradish, sea salt, liquid smoke, and grated onion. Mix well.
3. Mix the cheese mixture with the salmon, cover and refrigerate for several hours so it becomes firm.
4. Combine the pecans and parsley and spread evenly on a cutting board.
5. Form the salmon and cheese mixture into an 8 inch long, 2 inch diameter salmon log.
6. Roll the salmon log in the pecan and parsley mixture; chill well before serving.
