Recipe: Sausage Soup
- 1 lb bulk pork sausage
- 1 medium onion, chopped
- 1/2 cup chopped red pepper
- 1/2 tsp coarse ground garlic salt
- 4 cups water
- 2 (15oz) cans kidney beans, drained and rinsed
- 28oz can whole tomatoes, chopped
- 1 tsp salt
- 1/2 tsp dried thyme, crushed
- pepper to taste
- 1 bay leaf
- 1 cup cubed potato (1 large potato)
Brown sausage in a large skillet. Add onion, red pepper. Cook until vegetables are tender but not brown. Add water, garlic salt, kidney beans, tomatoes, salt, thyme, pepper and bay leaf. Bring to boiling, reduce heat and simmer, covered for 2 hours. Add potatoes cook for 20-25 minutes or until potatoes are tender. Remove bay leaf before serving. Makes
