Recipe: Sea Queen Casserole
- 1/4 cup chopped green pepper
- 1 medium Bermuda onion, chopped
- 4 tbsp butter
- 1/2 lb fresh mushroom caps
- 1 tbsp butter
- 1 pkg tiny peas, defrosted
- 2 cups cooked rice
- 1 cup mayonnaise
- 1/2 lb crab meat
- 1/2 lb shrimp
- 1 tsp curry powder
- 1 tsp black pepper
- 1 tsp Accent
- 2/3 cup light cream
- Saute the green pepper and onion in a non-stick skillet in 4 tablespoons butter.
- Add fresh mushroom caps and 1 tablespoon butter and peas, uncooked and drained. Fold all this into cooked rice. Add mayonnaise, crab, shrimp, curry, peppers, Accent, and light cream.
- Pour into casserole dish.
- Decorate with more mushroom caps.
- Cover and bake at 350° F for 30 to 40 minutes.
- Before serving sprinkle with toasted almonds.
