Recipe: Seafood Casserole Old Bay



 

Recipes using Old Bay Seasoning

 

1/2 tbsp. margarine
1/2 lb shrimp, peeled, deveined
1/2 lb lobster meat or scallops
1 clove garlic, minced
1/4 cup green pepper, diced
1/4 cup white wine
1 tsp lemon juice
1 egg, beaten
1/4 cup low fat mayonnaise
1 tsp dry mustard
1/4 tsp Old Bay Seasoning
1/8 tsp pepper
1 lb backfin crabmeat
1/4 cup seasoned bread crumbs
1/4 cup cheddar cheese, grated
paprika for sprinkling
  1. Preheat oven to 400 degrees.
  2. Melt margarine in skillet and add shrimp, lobster, garlic, and green pepper.
  3. Saute for 5 minutes. If you choose to use scallops, make sure all water is cooked out of scallops or bottom of casserole will contain too much liquid.
  4. Transfer contents from skillet into casserole dish.
  5. In small bowl, mix together the wine, lemon juice, egg, mayonnaise, mustard and seasonings.
  6. Mix until well blended.
  7. Gently mix crabmeat and bread crumbs into liquid.
  8. Pour mixture over seafood in casserole and sprinkle with cheddar cheese and paprika.
  9. Bake for 10 to 12 minutes.
