Recipe: Senator D'Amato's Chicken Scaloppine
- 1 package of 6 chicken cutlets
- 3 tbsp butter
- 1/2 cup corn oil
- 1/2 clove garlic, finely chopped
- 1/4 tsp oregano
- 1/4 cup fresh lemon juice
- 1/4 cup fresh parsley, chopped
- 1 small can sliced mushrooms
- Heat butter and oil in heavy skillet over medium flame.
- When hot, add chicken cutlets, and brown.
- When cutlets are brown, add garlic, rosemary, oregano, lemon juice, salt, and pepper.
- Cover immediately. Let simmer for 2-3 minutes.
- Add mushrooms. Cover again, and let cook for 10-15 minutes.
- Before serve, add chopped parsley.
