Recipe: Shoofly Cake
- 2 1/2 cups flour
- 3/4 cup sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup shortening
- 1 cup hot water
- 1/2 cup light molasses
- whipped cream or vanilla ice cream
- Preheat oven to 350 degrees.
- Stir together flour, sugar, soda and salt.
- Cut in shortening until mixture resembles fine crumbs.
- Remove 1/3 cup and set aside.
- Stir hot water and molasses together and add to crumb mixture; stir just until blended.
- Turn batter into greased 9 inch round cake pan.
- Sprinkle reserved 1/3 cup crumbs over top.
- Bake for 25-30 minutes.
- Serve warm or cool with whipped cream or ice cream.
