Recipe: Shrimp Toast
Shrimp Toast Ingredients
- 1 package 8 oz frozen, deveined shrimp
- 1 egg
- 6 slices of bread (at least 2 days old)
- 1 tsp sherry
- 4 water chestnuts, finely minced
- 2 cups canola oil
- 1 tsp salt
- 1/2 tsp sugar
- 1 tbsp cornstarch
To make Shrimp Toast
Place shrimp, egg, sherry, chestnuts, salt, sugar, and cornstarch in a blender or food processor. Chop until shrimp are coarse (just a few seconds). Trim crusts from bread and cut each slice into triangles. In saucepan, heat oil to 375° F or medium heat. Spread a teaspoon of shrimp mixture over each bread triangle. Gently lower 4 to 6 pieces at a time into hot oil, shrimp side down (mixture will not fall off). Cook Shrimp Toast about 1 minute, then turn over and fry a few more seconds. Drain Shrimp Toast on paper towels and serve with sweet and sour sauce. Servings: 24 pieces of Shrimp Toast, or 6 persons. Shrimp toasts can be fried, then frozen. When ready to serve, just heat in a 400° F. oven for 12 minutes. |
