Recipe: Shrimp and Rice
- 2 (8oz) cans pizza sauce
- 2 (8oz) cans tomato sauce
- 1/4 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped green pepper
- 1/2 cup water
- 2 tsps chili powder
- 1 tsp basil leaves
- 1 tsp garlic salt
- 2 lbs shrimp, cooked
To prepare shrimp:
- In a covered 3 quart pan heat pizza sauce, tomato sauce, onion, celery, green pepper, water, chili powder, basil and garlic salt; bring to boil.
- Reduce heat and simmer, stirring occasionally, 15-20 minutes.
- Place shrimp in sauce; cover and het to serving temperature.
- The shrimp in sauce can be made ahead and reheated at the last time.
To prepare rice:
- 3/4 cup butter (1 1/2 sticks)
- 6 cups hot cooked rice
- chopped parsley
- 1/2 lb sliced fresh mushrooms or 2 (4oz) cans sliced mushrooms.
