Recipe: Shrimp Jumbalaya
- 1 lb shrimp
- 1 lb hot sausage
- 1/2 cup chopped celery
- 1 cup chopped green or red pepper
- 1/2 cup chopped onion
- 2 tbsp tomato paste
- 1 cup water
- 1 cup beer
- 1 cup uncooked rice
- 1/8 tsp cayenne pepper
- 1 tbsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- bay leaf
- garlic powder
Cut sausage into 1 inch pieces and fry in a skillet until done; remove from skillet.
Clean shrimp.
Saute celery, green or red pepper and onions in sausage drippings until tender.
Add the tomato paste, water and beer and shrimp; mix well.
Bring to a boil.
Add seasonings, uncooked rice and cooked sausage; mix well.
Steam covered for ½ hour or until rice is done.
