Recipe: South Carolina Barbecued Chicken
- 2 tbsps butter or margarine
- 1 whole chicken, cut up (3 - 3 1/2lbs)
Sauce
- 2 tbsps brown sugar
- 1 cup catsup
- 1/2 cup celery, finely chopped
- 1/2 tbsp prepared mustard
- 1/8 tsp cayenne pepper
- 1/4 cup lemon juice
- 1 medium onion, finely chopped
- 3 tbsps Worcestershire sauce
- 1 cup water
- 1 tbsp salt
- Preheat oven to 350 degrees
- Cook chicken in butter in an oven proof skillet until a rich brown color on all sides.
- Mix all sauce ingredients together.
- Pour sauce over chicken.
- Cover skillet tightly and cook over low heat for 30 mins.
- Remove lid and put pan in the oven.
- Bake for 45 - 60 mins or until thoroughly cooked.
- As chicken bakes, baste it frequently with the sauce.
