Recipe: Strogonoff Meatballs
- 1 1/2 lbs lean ground beef
- 3/4 cup milk
- 3/4 cup bread crumbs
- salt and pepper to taste
- 1/4 cup butter or margarine
- 1 small onion, minced
- 1 1/2 cups dried mushrooms
- 1 tsp paprika
- 2 tbsps flour
- 3 cups beef broth
- 1 cup sour cream
- 2 tbsps chopped fresh dill
- In large mixing bowl, mix well ground beef, milk, bread crumbs, salt and pepper.
- Shape into medium sized meatballs.
- Heat 2 tbsps butter in a large skillet.
- Saute meatballs until brown; remove from pan and set aside.
- Add 2 more tbsps butter to skillet and saute onion until they are translucent.
- Stir in paprika and flour; cook 3 mins.
- Add beef broth and mushrooms to skillet.
- simmer for 5-10 mins, until mushrooms are soft and sauce thickens.
- Stir in sour cream and simmer until sauce is well blended.
- Return meatballs to the skillet and heat thoroughly.
- Sprinkle on dill just before serving.
