Recipe: Sunburst Lemon Bars



 

Recipes using Baking Powder

 

Base

  • 2 cups flour
  • 1/2 cup powdered sugar
  • 1 cup butter or margarine, softened

Filling

  • 4 eggs, slightly beaten
  • 2 cups sugar
  • 1/4 cup flour
  • 1/4 cup lemon juice
  • 1 tsp baking powder

Glaze

  • 1 cup powdered sugar
  • 2 to 3 tbsps lemon juice

To make Sunburst Lemon Bars

  1. Heat oven to 350° F.
  2. Lightly spoon flour into measuring cup; level off.
  3. In large mixing bowl combine all base ingredients.
  4. Beat at low speed until crumbly.
  5. Press mixture evenly in bottom of ungreased 13 X 9 inch pan.
  6. Bake at 350° F. for 20 - 30 mins or until light golden brown.
  7. In large mixing bowl combine all filling ingredients except lemon juice; blend well.
  8. Stir in 1/4 cup lemon juice.
  9. Remove pan from oven.
  10. Pour filling over warm base.
  11. Return to oven; bake an additional 25 - 30 mins or until top is light golden brown.
  12. Cool 1 hour or until completely cooled.
  13. In small mixing bowl combine 1 cup powdered sugar and enough lemon juice for desired glazing consistency.
  14. Blend until smooth.
  15. Glaze cooled bars; cut into bars.

Servings: Makes 36 Sunburst Lemon Bars
