Recipe: Super Beef Soup
- 3 lbs beef brisket or chuck
- 8 cups cold water
- 3 cabbage leaves, chopped fine
- 1 can tomato paste
- 1 cup chopped celery
- 1 large marrow bone
- 5 carrots, diced fine
- 1 medium onion, chopped
- 1/8 tsp pepper
- 1/2 cup pearl barley
- 3 tsps dried parsley flakes
- salt to taste
- French bread
- Cut up beef to bite size pieces.
- Simmer all ingredients 4 to 5 hrs.
- Place thick slice of hot buttered French bread in bowl and pour soup over it.
- If desired, bread may be sprinkled with grated cheese before adding soup.
