Recipe: Sweet Potato and Cranberry Casserole
- 6 sweet potatoes; cooked, peeled and sliced
- 1 1/2 cups whole cranberry sauce
- 3 tbsps dry sherry
- 1/4 cup brown sugar
- 2 tbsps butter or margarine
- 1/2 cup water
- 1/4 tsp nutmeg
- Preheat oven to 350 degrees.
- Combine cranberry sauce, sherry, water, brown sugar and nutgeg in saucepan.
- Bring to boil and cook over low heat for 5 mins.
- Stir in butter until melted.
- Arrange sweet potatoes in a casserole dish, pour sauce over.
- Bake for 25 mins.
Servings: 6 - 8
