Recipe: Sweet Potato Casserole

Recipes using McCormick Pure Vanilla Extract

• 3 cups boiled mashed sweet potatoes
• 1 cup sugar
• 2 eggs, slightly beaten
• 1/2 cup melted butter or margarine
• 1 tsp vanilla
• 1 cup light brown sugar
• 1/2 cup all purpose flour
• 1 cup chopped pecans
• 1/2 cup butter or margarine at room temperature

1. Preheat oven to 350 degrees
2. Combine first 5 ingredients and put in a greased 1 1/2 qt long baking dish.
3. For topping mix remaining ingredients with pastry blender; this make it crumbly for sprinkling.
4. Sprinkle over top of the potato mixture.
5. Bake for 30 mins or until inserted knife comes out clean.
