Recipe: Sweet Potato Casserole
- 3 cups boiled mashed sweet potatoes
- 1 cup sugar
- 2 eggs, slightly beaten
- 1/2 cup melted butter or margarine
- 1 tsp vanilla
- 1 cup light brown sugar
- 1/2 cup all purpose flour
- 1 cup chopped pecans
- 1/2 cup butter or margarine at room temperature
- Preheat oven to 350 degrees
- Combine first 5 ingredients and put in a greased 1 1/2 qt long baking dish.
- For topping mix remaining ingredients with pastry blender; this make it crumbly for sprinkling.
- Sprinkle over top of the potato mixture.
- Bake for 30 mins or until inserted knife comes out clean.
