Recipe: Tamale Pie
- 1 cup cornmeal
- 1 cup cold water
- 2 cups boiling water
- 2 tbsp butter
- 1 pound lean ground beef
- 1 green pepper, chopped
- 1 medium onion, chopped
- 1 1/2 tsp chili powder
- 1 tsp Lawry's Seasoned Salt
- 1/8 tsp white pepper
- 16 oz can kidney beans, drained
- 1 can condensed tomato soup
- Preheat oven to 350° f.
- Combine cornmeal and water in pan.
- Gradually stir in boiling water, and butter.
- Continue to cook, stirring constantly, until thickened.
- Cover, cook 5 minutes until mushy; cool slightly.
- Saute beef, onion, green peppr, and seasonings in a frying pan until meat is done to taste.
- Add the beans, and tomato soup.
- Line a geased baking dish with 1/2 of the cornmeal mix made in step 2.
- Top cornmeal with meat; Top meat with remaining cornmeal mix.
- Bake for 30 minutes.
