Recipe: Tandoori Chicken
- 8 chicken breasts, skin removed
- 1/2 cup lemon juice
- 1/2 cup canola oil
- 1/4 tsp garlic powder
- 1/2 tsp ground ginger
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- 1/2 tsp cardamom
- 1 tbsp paprika
- 1/2 cup water
- Clean chicken breasts. Score tops of breasts across grain.
- Place chicken into a non-metal casserole bone side down. Pour the lemon juice over the breasts, cover, and marinate, refrigerated, for 30 minutes.
- Combine remaining ingredients, and mix well in a blender. Pour over the chicken breasts, and marinate, refrigerated, at least 4 hours.
- Preheat oven to 500° F.
- Transfer chicken to a clean, lightly oiled baking pan bone side down. Place chicken in oven, and bake for 30 minutes, basting occasionally with marinade.
