Recipe: Tarragon Chicken



 

Recipes using McCormick White Pepper

 

Tarragon Chicken Ingredients

  • 6 boneless skinless chicken breasts
  • 4 tbsps butter or margarine
  • 1/4 cup brandy
  • 1/4 cup minced onion
  • 2 tbsps flour
  • 1 tbsp tomato paste
  • 1/2 cup chicken broth
  • 3/4 cup dry white wine
  • 3/4 tsp crushed dried tarragon
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • dash Tabasco Sauce (optional)

To make Tarragon Chicken

  1. Preheat oven to 350° F.
  2. In a large skillet, brown chicken in 3 tbsps butter.
  3. Warm brandy, ignite and pour over chicken.
  4. When flame dies, remove chicken from skillet and place chicken in shallow 2 quart casserole.
  5. Reduce brandy until it barely coats skillet.
  6. Add to skillet remaining tbsp of butter and saute onion 3 minutes.
  7. Add flour to butter mixture and cook 3 mins, stirring constantly.
  8. Slowly stir in tomato paste, broth, and wine.
  9. Simmer briefly, stirring constantly until sauce is smooth.
  10. Add tarragon, salt, white pepper, and tabasco (optional).
  11. Pour sauce over chicken in casserole.
  12. Cover casserole and bake Tarragon Chicken for 30 minutes or until tender.

Makes 6 servings of Tarragon Chicken.
