Recipe: Toad-In-The-Hole
- 4 oz all-purpose flour
- 1/4 tsp sea salt
- 1 egg
- 1/2 cup milk or sufficient to make a creamy batter
- 8 oz sausages or sausage meat
- 2 oz margarine
- 1/2 tsp baking powder
Make a batter with flour, salt, baking powder, egg and milk. Beat well. Leave for an hour covered with a cloth. Add more milk if too thick. Beat again. Skin sausages, if necessary, shaping meat into 2" sausages. Heat margarine in 11"
x 8" pan until smoking hot. Pour in batter and drop the sausages gently in a regular pattern. Bake for 35 minutes at 400° - 450° F oven until batter is set. Serve with a green vegetable, traditionally spinach, but others are as good.
